Coconut Flan Pie

INGREDIENTS:

  • Single Crust pastry pie crust
  • 3/4 cup lite coconut milk
  • 1 (14 oz.) can sweetened condensed milk
  • 3 large eggs
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 cup flaked coconut

LET'S MAKE THE PIE:

  • HEAT oven to 400°F. Prepare recipe for single crust pie. Roll out and place in 9-inch pie plate. Press to fit without stretching dough. Flute edges. Thoroughly prick bottom and sides with fork to prevent shrinking. Bake 10 minutes. Reduce oven temperature to 350°F.
  • COMBINE coconut milk, sweetened condensed milk, eggs, water and vanilla in blender container. Process 1 minute or until blended. Add coconut. Process for 30 seconds. Pour into partially baked pie crust.
  • BAKE 50 to 55 minutes or until knife inserted in center comes out clean. Cool 30 minutes. Chill 2 hours.
  • A deep-dish 9-inch frozen crust can be substituted in this recipe. Allow to thaw at room temperature 10 minutes. Follow directions above to prick with a fork and bake before adding filling.

Banana Cream Pie with Toasted Coconut

Ingredients:

  • 1/2 cup sugar
  • 6 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 2 1/2 cups milk
  • 2 egg yolks or 1 large egg, slightly beaten
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • 3 ripe bananas
  • 1 baked pie shell, 9-inch
  • 1/2 cup shredded coconut
  • 1/2 cup heavy cream, whipped, sweetened with a little sugar if desired

Preparation:

Mix sugar with flour and salt in top of a double boiler. Gradually stir in milk; continue cooking, stirring constantly, over boiling water until thickened. Cover and cook for an additional 10 minutes, stirring occasionally. To the beaten egg add a small amount of the milk mixture while stirring vigorously; return egg mixture to the milk mixture in the double boiler and cook, stirring constantly, for 2 more minutes over hot water (not boiling). Remove from heat; add butter and vanilla then cool. Slice 2 bananas into the baked pie shell. Pour cooked mixture over bananas all at once. Chill for 1 hour or more. Put coconut in a shallow pan and toast by baking at 350 for 10 minutes, stirring occasionally. Coconut should be lightly browned. Cool coconut and set aside. Just before serving, spread pie with whipped cream and thinly slice remaining banana. Sprinkle toasted coconut evenly over the top of the pie and arrange banana slices around the pie's outer edge.

Mississippi Coconut Chess Pie

Ingredients:

  • 1 stick butter (4 ounces)
  • 1 1/2 cups granulated sugar
  • 3 eggs, beaten
  • 1 cup flaked coconut
  • 2 teaspoons vinegar
  • 1 1/2 teaspoons vanilla

Preparation:

Combine butter and sugar in saucepan; heat, stirring, until melted and well blended. Combine all ingredients and mix. Pour into an unbaked pie shell. Bake for about 1 hour at 350°, or until a knife inserted in center comes out clean.

Best Ever Coconut Pie

Ingredients:

  • 3 eggs, beaten
  • 1 1/2 cups sugar
  • 1/2 cup butter or margarine, melted
  • 4 teaspoons fresh lemon juice
  • 1 teaspoon vanilla
  • 1 1/3 cups grated coconut (3 ounce can)
  • pinch salt
  • 1 unbaked pie pastry, 9-inch

Preparation:

Preheat oven to 350°. Combine eggs, sugar, butter, lemon juice, vanilla, and salt; mix well. Stir in coconut; pour into pie shell and bake for 30 minutes. Shield the crust edge with a pie shield ring or fashion one with aluminum foil and place over edge. Bake for 10 to 20 minutes longer, until set and no longer jiggly.
As the pie bakes, a golden topping forms on the surface.
Chill thoroughly before serving. The pie will be gooey if served at room temperature.

Awesome Coconut Pie


INGREDIENTS:

2 cups milk
3/4 cup sugar
1/2 cup all-purpose baking mix
eggs
1/4 cup (1/2 stick) butter or margarine, softened
1 tsp. vanilla
2/3 cup raisins
1-1/3 cups (1/2 of 7-oz. bag) flake Coconut

Let's Make the Pie:


PREHEAT oven to 350°F. Place milk, sugar, baking mix, eggs, butter and vanilla in blender container; cover. Blend on low speed 3 minutes. (Or, shake vigorously in tightly covered 2-quart jar 30 seconds.)
POUR into greased 9-inch pie plate. Sprinkle with raisins and coconut.
BAKE 40 minutes or until pie is set in center and top is golden brown. Cool on wire rack. Serve warm or at room temperature. Store leftover pie in refrigerator.
