Lemon Chess Pie

Ingredients:

  • 1 9-inch pie shell, unbaked
  • 4 eggs
  • 1 1/2 cups granulated sugar
  • 1/2 cup melted butter
  • 1 tablespoon plus 2 teaspoons cornmeal
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon finely grated lemon peel
  • pinch salt

Preparation:

Beat eggs well; add sugar, butter, and cornmeal, beating well after each addition. Stir in lemon juice, grated lemon peel, and salt. Pour into unbaked pie shell and bake in preheated 325° oven until set, about 30 to 35 minutes, or until a knife inserted near center comes out clean.

Mississippi Coconut Chess Pie

Ingredients:

  • 1 stick butter (4 ounces)
  • 1 1/2 cups granulated sugar
  • 3 eggs, beaten
  • 1 cup flaked coconut
  • 2 teaspoons vinegar
  • 1 1/2 teaspoons vanilla

Preparation:

Combine butter and sugar in saucepan; heat, stirring, until melted and well blended. Combine all ingredients and mix. Pour into an unbaked pie shell. Bake for about 1 hour at 350°, or until a knife inserted in center comes out clean.

Kentucky Chocolate Chess Pie

Ingredients:

  • 1/4 cup butter
  • 1 1/2 ounces unsweetened chocolate
  • 1 1/2 cups sugar
  • 1 tablespoon flour
  • pinch of salt
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 unbaked 9" pastry shell

Preparation:

Melt butter with chocolate. In a mixing bowl, combine chocolate and butter mixture with sugar, flour, salt, milk, eggs, and vanilla; beat with electric mixer for 5 to 6 minutes. Pour filling into prepared pastry shell; bake at 350° for 35 to 45 minutes, until set.

Polka Dot Chess Pie

Ingredients:

  • 1/2 cup butter
  • 1 cup sugar
  • 4 eggs - 3 whole, 1 separated
  • 1/4 cup heavy cream
  • 1 teaspoon grated lemon peel
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts
  • 1 cup raisins

Preparation:

Cream butter and sugar until light. Beat in 3 eggs and 1 egg yolk, one at a time, beating well after each addition. Beat in cream, lemon peel, lemon juice, and vanilla. Stir in pecans and raisins. Beat egg white until stiff peaks form then fold into filling mixture. Pour mixture into shell; bake at 350° for 45 minutes, or until firm around the edges but still a little jiggly in the middle.

Double Chocolate Chess Pie

Ingredients:

  • 1/2 cup butter
  • 2 oz chocolate, unsweetened
  • 1 cup sugar
  • 3 eggs, lightly beaten
  • 1/4 cup creme de cacao liqueur
  • 2 tablespoons all-purpose flour
  • 1 1/2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • 1 pie shell, baked
  • vanilla ice cream or whipped cream for topping

Preparation:

Preheat oven to 350 In a saucepan over low heat, melt butter and chocolate. Remove from heat. Blend in sugar, eggs, liqueur, flour, vanilla and salt. Beat until smooth. Pour into the pie shell. Bake for 30 to 35 minutes or until set. Cool on a wire rack for at least 30 minutes.

Pineapple Chess Pie

Ingredients:

  • 1 c crushed pineapple, drained
  • 2 c sugar
  • 1 tb cornstarch
  • 1 c coconut
  • 4 eggs
  • 1 stick of margarine
  • 1 ts vanilla
  • 1 pie shell, baked

Preparation:

Mix all the ingredients; pour into pie crust. Bake at 350° 30 to 40 minutes, until done.

  • 1 cup chopped pecans
  • 2 teaspoons finely grated lemon peel, optional

Preparation:

Cream butter and sugar until light. Beat in 3 eggs and 1 egg yolk, one at a time, beating well after each addition. Beat in cream and vanilla. Stir in pecans and lemon peel, if using. Beat the remaining egg white until stiff peaks form then fold into filling mixture. Pour mixture into shell; bake at 350° for 45 minutes, or until set.
